This earthy espresso blends produced from coffee cherries in two regions: Nicaragua & Brazil. The blend consists of three varietal: Caturra Catuai, Yellow Catuai and Rubi - grown at 1000-1450m above sea level. Beautiful fully ripe cherries are hand picked and processed naturally, resulting in the creation of some incredible flavour profiles. Syrupy sweetness with a buttery mouthful and a toasted almond note.

Nicaragua has suffered in recent times with the devastating effects of Hurricane Mitch and the prolonged world coffee price crisis. However, this now is a country that can, and now does, produce some very desirable coffees. Cordillera de Dipilto - Jalapa - a mountainous region along the Honduran border benefits greatly from high altitude and excellent climatic conditions. Thus, this region is famous for producing Cup of Excellence winning lots.
Brazil is South America’s most influential and economically powerful country and one of the world’s largest economies. Coffee plantations cover about 27,000 km2 (10,000 sq mi) of the country; of the approximately six billion trees, 74% are arabica and 26% robusta. We have chosen both of our Brazil coffees from the Cerrado in Minas Gerais as the region is renowned for producing coffees that are great for anchoring solid espresso blends with plenty of body and sweetness, often with nuances of cocoa and berries.
Farms: Samaria, Fazenda Ouro Verde & Fazenda Cruzeiro
North-West Nicaragua is where Caturra Catuai varietals are farmed at Samaria, 24km from the regions capital: Ocotal. Samaria embodies a diverse range of luscious vegetation and wildlife, brought about by the high levels of annual rainfall. What's more, the climate in Samaria is very humid - as a result trees are more sparsely planted across the 85 hectares so that everything is properly aerated.
Fazenda Ouro Verde (Green Gold Farm) is around 130 hectares in size with 100 hectares set aside for coffee and is located near the city of Patos de Minas, at an altitude of approximately 1000 metres ASL. The ripe cherries (Yellow Catuai) are machine picked and put into a Pinhalese depulper which removes the skin of the cherry leaving sticky beans exposed. The sorted cherries are then spread out to dry on a patio for a period of around 8 to 10 days depending on the weather. During this time the sugars and enzymatic by-products are absorbed into the heart of the bean lending the cup its distinctive sweet and full bodied flavour.
Purchased in 2009 by Claudio Ottani, Fazenda Cruzeiro is located in the Cerrado Mineiro region. Of which, just 5% of the land farmed is for the production of the rare Rubi varietals. The biggest innovation that Cruzeiro has implemented with regards to quality is the use of silo dryers in the processing of their coffee. The silo drying process doesn't 'kill' the bean - Claudio Ottoni has stated, "It is important to keep the coffee beans alive for a sweeter and cleaner cup."
